We are very fortunate to be in a fantastic market town surrounded by incredible food producers. Our menus are built around what can be sourced locally as much as possible, we also bring in fresh fish and local mussels and oysters landed just at the bottom of the marshes of our sister establishments The White Horse and The Jolly Sailors in Brancaster Staithe, Norfolk and occasionally we can get great quality game from the parkland near to our other inn The Kings Head in Letheringsett, Norfolk.

Adam O’Sullivan an out and out family man and head chef with experience of some 16 years has returned to his roots and his beloved Bishops Stortford. His career to date has taken him across Europe including France, Spain and Cyprus also north Cornwall where he fell in love with cooking fish. He has worked under the guidance of Michelin chefs along the way to gain his unrivalled experience. His reputation goes before him in Bishop’s Stortford and he has taken great pride in picking a great kitchen ‘brigade’ to join him to strengthen the culinary offer at Water Lane.
